Ingredients
  

Fresh Ingredients
  • 100 g flat-leaf parsley leaves (thick stems removed) Fresh parsley provides the best flavor.
  • 4 cloves garlic Use fresh garlic for the best taste.
  • 2 pieces red cayenne chillies (deseeded) Adjust the spiciness to your preference.
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 50 ml red wine vinegar Can experiment with different types of vinegar.
  • 120 ml olive oil
  • Sea salt flakes To taste.

Method
 

Preparation
  1. Add all the ingredients into a food processor or mini chopper.
  2. Blitz the mixture until everything is finely chopped and well combined.
  3. Taste your chimichurri, then adjust the seasoning as desired—add more salt for extra savouriness, a splash of vinegar for tanginess, or extra olive oil if you prefer a looser consistency.
  4. Enjoy your chimichurri immediately, or store it in an airtight jar in the fridge for later use.
