  • 3 cups shredded or diced cooked chicken Feel free to use leftover grilled chicken or rotisserie chicken.
  • 1 14.5 oz can black beans, rinsed and drained
  • 1 cup corn (fresh or canned)
  • 1 medium red bell pepper, diced
  • cup diced red onion
  • ¼ cup fresh cilantro, chopped Fresh parsley can be a substitute for cilantro.
Dressing Ingredients
  • ½ cup sour cream
  • 1 large lime, juiced
  • 1-2 teaspoons hot sauce (e.g., Frank's)
  • ½ teaspoon chili powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon kosher salt

Method
 

Preparation
  1. In a large bowl, combine the cooked chicken, black beans, corn, red bell pepper, red onion, and cilantro.
  2. In a separate small bowl, mix together the sour cream, lime juice, hot sauce, chili powder, cumin, and kosher salt.
  3. Pour the dressing over the salad and toss gently until everything is well-coated.
  4. Taste and adjust seasoning, adding more lime juice or hot sauce if desired.
  5. Chill in the refrigerator for about 30 minutes before serving for the best flavor.
