Ingredients
  

Potato Salad Base
  • 3 pounds gold potatoes, peeled & cut into bite-size pieces Choose gold potatoes for a creamy texture.
  • 1 tablespoon chicken bouillon powder for boiling water (Omit for a vegetarian version.)
  • 1/2 cup diced sweet onion
  • 1/2 cup diced celery
  • 1 teaspoon all-purpose seasoning like Lawry’s or Tony’s
  • 3 large hard-boiled eggs, chopped (plus extra for topping) Add more chopped eggs for garnish.
Dressing
  • 1/2 cup Duke’s Mayo Can be replaced with a lighter option.
  • 1/2 cup Miracle Whip
  • 2 tablespoons yellow mustard
  • 2 tablespoons dill relish or sweet relish if preferred.
  • 1–2 teaspoons granulated sugar optional (Can be omitted.)
  • Smoked paprika for garnish

Method
 

Preparation
  1. Start by boiling the gold potatoes in a large pot of water with chicken bouillon powder until tender, about 15-20 minutes.
  2. Drain the potatoes and let them cool slightly before transferring them to a large mixing bowl.
  3. In the same bowl, combine the diced sweet onion, celery, and all-purpose seasoning with the potatoes.
  4. In a separate bowl, mix together the mayonnaise, Miracle Whip, yellow mustard, dill relish, and sugar if using. Stir until smooth.
  5. Pour the dressing over the potato mixture and gently fold until everything is well-coated.
  6. Add the chopped hard-boiled eggs and mix gently.
  7. Adjust seasoning as needed, then garnish with extra eggs and a sprinkle of smoked paprika before refrigerating.
