- In a large pot, fry the bacon over medium heat until crispy. Remove it, allowing it to drain on paper towels, but keep the drippings in the pot.
- Toss in your chopped onion and minced garlic. Sauté until softened and fragrant, about 3–4 minutes.
- Pile in the collard greens and pour in the chicken broth or water, enough to cover the greens.
- Sprinkle in salt, pepper, and red pepper flakes to taste.
- Bring to a gentle simmer, cover, and let it cook for 45 minutes to an hour, until the greens are tender.
- If you like, stir in the vinegar before serving. Crumble the bacon on top for that finishing touch.
