Ingredients
  

Dry Ingredients
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
Wet Ingredients
  • 1/2 cup margarine, softened or use butter for a richer flavor
  • 1 cup white sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1/2 teaspoon vanilla extract
For Rolling
  • to taste sugar for rolling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the all-purpose flour, ground ginger, baking soda, salt, and ground cinnamon until well combined.
  3. In another large bowl, cream together the softened margarine with the white sugar and brown sugar until it becomes smooth and fluffy.
  4. Beat in the egg, followed by the molasses and vanilla extract, mixing until everything is well incorporated.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing gently until just combined.
  6. Roll the dough into small balls and then roll each ball in sugar for an extra sweet touch.
  7. Place the dough balls on a baking sheet and gently flatten them with your hand.
Baking
  1. Bake the cookies for about 8-10 minutes, or until the edges are crisp while the centers remain soft.
  2. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
