- Preheat your oven to 350°F (175°C).

- In another large bowl, cream together the softened margarine with the white sugar and brown sugar until it becomes smooth and fluffy.
- Beat in the egg, followed by the molasses and vanilla extract, mixing until everything is well incorporated.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing gently until just combined.
- Roll the dough into small balls and then roll each ball in sugar for an extra sweet touch.
- Place the dough balls on a baking sheet and gently flatten them with your hand.
Baking
- Bake the cookies for about 8-10 minutes, or until the edges are crisp while the centers remain soft.
- Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
