Preparation
- Preheat the oven to 375°F. Grease an 8x8-inch glass baking dish and set it aside.
- In a small bowl, stir the cinnamon sugar from the cookie mix together with the apple pie spice; reserve 2 tablespoons of this mixture for sprinkling on top.
- In a large bowl, combine the cookie mix, softened butter, egg, and vanilla. Stir until a cohesive dough forms, which will be thick and slightly sticky.
- Press half of the dough evenly into the bottom of the prepared baking dish.
- Spoon the apple pie filling over the pressed dough and spread it into an even layer.
- Drop spoonfuls of the remaining cookie dough over the apple layer.
- Sprinkle the reserved cinnamon sugar mixture over the top.
Baking
- Bake for 45-50 minutes, until the top is golden and the filling is bubbling. Tent with foil if the top browns too quickly.
- Let the cobbler cool for 5-10 minutes before serving.
- Drizzle with caramel dessert sauce and serve warm, preferably with vanilla ice cream.
