Preparation
- Preheat your oven to 350°F and prepare a 9-inch baking pan by lining it with foil and spraying with non-stick spray.
- In a food processor, grind the Golden Oreo cookies until finely crushed. Mix in the melted butter until crumbs are coated. Press this mixture into the bottom of the prepared pan and set aside.
- In a medium bowl, combine cream cheese, 1/2 cup sugar, egg, and vanilla extract. Beat until smooth and creamy, ensuring no lumps remain.
- Pour the cheesecake mixture over the crust and spread evenly.
- In a small bowl, combine 3 tbsp sugar with 1/2 tsp ground cinnamon. Set aside.
- Scoop about 2-inch dough balls from the sugar cookie dough, flatten each ball, and coat both sides in the cinnamon sugar mixture. Arrange evenly over the cheesecake layer.
- Sprinkle any remaining cinnamon sugar mixture over the top of the cookie dough.
- Bake for 40-45 minutes until the center is set and the edges are golden brown. Allow to cool for about 30 minutes, then refrigerate for 2-3 hours or until completely set.
- Cut into bars and enjoy! Store leftovers in the fridge.
