- Preheat the oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper.
- In a medium bowl, mix together graham cracker crumbs, sugar, and melted butter until all crumbs are coated.
- Press the crust mixture evenly onto the bottom of the prepared baking dish. Set aside.
- In a large mixing bowl, beat together cream cheese, sour cream, sugar, flour, vanilla extract, and ground cinnamon until smooth using an electric mixer on medium speed.
- Add the eggs one at a time, beating well after each addition.
- In a small bowl, combine granulated sugar and ground cinnamon for the cinnamon sugar mixture. Set aside.
- Pour half of the cheesecake filling over the prepared crust. Sprinkle half of the cinnamon sugar mixture over the filling. Then, pour the remaining cheesecake filling on top and sprinkle with the remaining cinnamon sugar mixture.
- Bake for 40-45 minutes, or until the center of the bars is set with only a slight jiggle.
- Remove from the oven and let cool to room temperature. Chill the bars in the refrigerator for at least 2 hours, or overnight, before cutting into squares and serving.
