- Preheat your outdoor grill or a grill pan over medium-high heat.
- In a small bowl, whisk together olive oil, balsamic vinegar, smoked paprika, dried oregano, garlic powder, salt, and pepper until well combined.
- Place the zucchini slices in a large bowl or shallow dish. Pour the olive oil mixture over the zucchini, ensuring each piece is generously coated.
- Allow the zucchini to marinate for about 15 minutes to help the flavors absorb.
Cooking
- Once the grill is ready, place the zucchini slices on it. Cook for about 3-4 minutes on each side, or until grill marks appear and the zucchini is tender.
- After grilling, remove the zucchini and transfer it to a serving platter.
- Squeeze fresh lemon juice over the grilled zucchini for extra brightness.
- Garnish with freshly chopped parsley and, if desired, sprinkle crumbled feta cheese on top before serving.
