For the Marinade
  • 3 tablespoons olive oil Use fresh, high-quality olive oil for the best flavor.
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon smoked paprika Provides a smoky flavor.
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • to taste Salt and pepper
For the Zucchini
  • 4 medium zucchini, sliced lengthwise
For Serving
  • 1 lemon cut into wedges For squeezing over the zucchini.
  • ¼ cup crumbled feta cheese Optional topping.

Method
 

Preparation
  1. Preheat your outdoor grill or a grill pan over medium-high heat.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, smoked paprika, dried oregano, garlic powder, salt, and pepper until well combined.
  3. Place the zucchini slices in a large bowl or shallow dish. Pour the olive oil mixture over the zucchini, ensuring each piece is generously coated.
  4. Allow the zucchini to marinate for about 15 minutes to help the flavors absorb.
Cooking
  1. Once the grill is ready, place the zucchini slices on it. Cook for about 3-4 minutes on each side, or until grill marks appear and the zucchini is tender.
  2. After grilling, remove the zucchini and transfer it to a serving platter.
  3. Squeeze fresh lemon juice over the grilled zucchini for extra brightness.
  4. Garnish with freshly chopped parsley and, if desired, sprinkle crumbled feta cheese on top before serving.
