Ingredients
  

For the meatloaf
  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 2 pieces eggs
  • 1 cup shredded cheddar cheese Can substitute with pepper jack for extra kick.
  • 1/2 cup chopped jalapeños Fresh or pickled for added zing.
  • 1/2 cup cream cheese
  • 1/4 cup ranch dressing
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, eggs, shredded cheddar cheese, chopped jalapeños, cream cheese, ranch dressing, garlic powder, onion powder, salt, and pepper.
  3. Mix everything until well combined using your hands for the best mix.
  4. Shape the mixture into a loaf and place it in a baking dish.
  5. Bake in the preheated oven for about 1 hour, or until the meatloaf is cooked through and the internal temperature reaches 160°F.
  6. Let it rest for a few minutes before slicing and serving to help maintain juiciness.
