  • 2 cups vegetable or chicken broth Choose low-sodium for a healthier option.
  • 1 cup shredded cheddar cheese Freshly shredded cheese melts creamier than packaged.
  • 1 package tortellini Use your preferred tortellini, fresh or frozen.

Preparation
  1. In a slow cooker, combine the 4 cups of tomato soup or puree and 2 cups of broth. Mix well.
  2. Add your desired tortellini to the mixture and stir to combine.
  3. Cover and let it cook on low for 4 hours, or until the tortellini is tender.
  4. Once cooked, stir in the 1 cup of shredded cheddar cheese until fully melted.
  5. Serve hot, pairing it with toast bites for added crunch.

Notes

For added flavor, sprinkle fresh herbs on top before serving. Store leftovers in an airtight container for up to 3 days in the fridge, or freeze for up to 3 months. Reheat on medium heat, adding broth or water as needed to adjust consistency.
