  • 4 boneless, skinless chicken breasts
  • 1/4 cup lemon juice White wine vinegar can be used as a substitute.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano Fresh can be used for a more aromatic flavor.
  • 1 teaspoon dried thyme Fresh can be used for a more aromatic flavor.
  • to taste salt and pepper
  • 1 cup chicken broth Ensure it's gluten-free if needed.
Serving Ingredients
  • 2 cups cooked rice Fluffy rice works best.
  • Fresh herbs (such as parsley or basil) For garnish.

Preparation
  1. In your slow cooker, combine the lemon juice, olive oil, minced garlic, oregano, thyme, salt, and pepper.
  2. Add the chicken breasts and make sure they're well-coated with the marinade.
  3. Pour the chicken broth over the chicken to keep everything moist.
  4. Cover the slow cooker and cook on low for 4-6 hours, or until the chicken is fully cooked and tender.
  5. Once done, serve the chicken over fluffy cooked rice and garnish with fresh herbs for a pop of color and flavor.
