Ingredients
  

For the Chicken
  • 4 pieces chicken breasts
  • 2 pieces lemons (juice and zest)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 2 teaspoons dried thyme
  • 2 teaspoons dried oregano
  • 1 cup chicken broth
  • Salt and pepper to taste
For the Rice
  • 2 cups rice You can use white, jasmine or basmati rice.
  • 4 cups water For cooking the rice.
For Garnish
  • Fresh parsley (for garnish)

Method
 

Preparation
  1. In a slow cooker, combine chicken breasts, lemon juice and zest, olive oil, garlic, thyme, oregano, chicken broth, salt, and pepper.
Cooking
  1. Cook on low for 6-7 hours or on high for 3-4 hours.
  2. About 30 minutes before serving, cook rice according to package instructions using the water.
Serving
  1. Serve the lemon herb chicken over fluffy rice and garnish with fresh parsley.
