Ingredients
  

Main Ingredients
  • 32 ounces frozen tater tots
  • 1 pound ground beef Browned with peppers and onions
  • 2 cups frozen peppers and onions Can substitute with fresh
  • 1 ounce taco seasoning mix
  • 2/3 cup water
  • 16 ounces sour cream Mixed with cheese
  • 2 cups shredded cheddar cheese Divided into layers
  • scallions and tomatoes for topping Fresh garnish

Method
 

Preparation
  1. Spray the slow cooker with non-stick spray.
  2. Layer the frozen tater tots evenly at the bottom of the slow cooker.
  3. In a large skillet, brown the ground beef with frozen peppers and onions over medium-high heat. Drain excess fat.
  4. Stir in taco seasoning and water, and allow to simmer for about 5 minutes.
  5. Pour the meat mixture over the tater tots in the slow cooker.
  6. Mix sour cream with 1 cup of shredded cheddar and spread over the meat layer.
Cooking
  1. Cover the slow cooker and cook on low for 4 hours.
  2. Sprinkle the remaining cheese on top and let it melt before serving.
  3. Garnish with chopped scallions and diced tomatoes.
