Preparation
- Spray the slow cooker with non-stick spray.
- Layer the frozen tater tots evenly at the bottom of the slow cooker.
- In a large skillet, brown the ground beef with frozen peppers and onions over medium-high heat. Drain excess fat.
- Stir in taco seasoning and water, and allow to simmer for about 5 minutes.
- Pour the meat mixture over the tater tots in the slow cooker.
- Mix sour cream with 1 cup of shredded cheddar and spread over the meat layer.
Cooking
- Cover the slow cooker and cook on low for 4 hours.
- Sprinkle the remaining cheese on top and let it melt before serving.
- Garnish with chopped scallions and diced tomatoes.
