Main Ingredients

  • 4 cups frozen corn (or fresh corn, if in season) Fresh corn is highly recommended when in season.
  • 8 oz cream cheese, cubed
  • 1/4 cup butter, cut into pieces
  • 1 cup half-and-half
  • 1/4 cup sugar Adjust to taste.
  • Salt and pepper to taste

Garnish

  • chopped fresh herbs Optional for garnish.

Instructions
 

Preparation

  • In a slow cooker, combine the frozen corn, cream cheese, butter, half-and-half, and sugar.
  • Stir well to distribute the ingredients evenly.

Cooking

  • Cover and cook on low for 4-6 hours or on high for 2-3 hours, stirring occasionally, until the corn is tender and the mixture is creamy.
  • Season with salt and pepper to taste before serving.
  • If desired, garnish with chopped fresh herbs before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-5 days. Reheat in the microwave or on the stove. For a richer taste, add cheese during the last 30 minutes of cooking.
