Ingredients
  

Vegetables

  • 1 full onion Chopped
  • 6 to 7 pieces potatoes Chopped
  • 1 piece carrot Chopped (or 2 to 3 carrots if preferred)

Main Ingredients

  • 2 tins corned beef Drained and diced

Seasoning

  • 2 cubes beef oxo cube Dissolved in water
  • 80 ml water For dissolving the beef oxo cubes

Preparation

  • Chop the onion, potatoes, and carrot.
  • Place the chopped vegetables into the slow cooker.
  • Add the tins of corned beef (drained and diced).
  • Dissolve the beef oxo cubes in 80 ml of water and pour into the slow cooker.
  • Stir to combine all ingredients.
  • Cover and cook on high for around 5 hours or until the potatoes are tender.

Serving Suggestions

  • Serve Slow Cooker Corned Beef Hash straight from the slow cooker.
  • Garnish with fresh parsley or serve with a fried egg on top.
  • Pair it with crusty bread for a more filling meal.

Notes

Cool completely before storing leftovers. Keep in an airtight container in the fridge for up to 3 days. To reheat, warm in a saucepan or microwave until heated through. Adjust potatoes and carrots to preference. For added spice, consider adding black pepper or hot sauce.
