  • 1 pound boneless skinless chicken breasts or tenderloins Optional: use shredded rotisserie chicken for quicker preparation.
  • 2 cups heavy cream You can use half-and-half for a lighter option.
  • 1 cup chicken broth
  • 4 tablespoons butter
  • 2 cloves garlic (minced) Sautéing the garlic beforehand adds more flavor.
  • 1 teaspoon black pepper
  • 19 ounces frozen cheese tortellini If using fresh tortellini, reduce cooking time to 5-10 minutes.
  • 1 cup shredded Parmesan Add at the end to combine with other ingredients.

Preparation
  1. In your slow cooker, add the chicken, heavy cream, butter, and chicken broth.
  2. Stir in the minced garlic and black pepper.
  3. Cover and cook on high for about 2 to 4 hours or on low for 4 to 6 hours.
  4. Once cooked, carefully remove the chicken and place it in a separate bowl, shredding or chunking it to your desired size.
  5. Add the chicken back into the slow cooker and incorporate the frozen cheese tortellini.
  6. Cook the tortellini for 18 to 20 minutes, or until tender.
  7. Finally, stir in the shredded Parmesan cheese until everything is well combined.
  8. Serve hot, garnished with parsley and additional shaved Parmesan if desired.

Notes
