  • 4 pieces boneless skinless chicken breasts
  • 2 cups gold potatoes (peeled and cubed; about 5-6)
  • 1 medium onion (chopped)
  • 4 pieces ribs/sticks celery (chopped)
  • 3-5 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 cans cream of chicken soup (10.5 ounce cans)
  • 1 cup chicken broth
  • ½ cup heavy cream or whole milk Optional for a creamier texture
  • 1 bag frozen mixed vegetables (16 ounce)
  • 1 can Grands Southern Homestyle Butter Tastin’ Biscuits (16.3 ounce; for serving)
  • to taste fresh parsley (for garnish, optional)

Method
 

Preparation
  1. Place chicken breasts evenly in the slow cooker.
  2. Layer on the cubed potatoes, chopped onion, celery, minced garlic, and sprinkle in thyme, salt, and pepper.
  3. Pour the cream of chicken soup, chicken broth, and heavy cream over the top.
  4. Close the lid and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  5. About an hour before serving, preheat the oven and prepare the biscuits according to package instructions.
Final Steps
  1. Once the chicken is done, carefully remove it from the slow cooker. Cut into bite-sized pieces or shred with a fork.
  2. Return the chicken to the slow cooker and toss in frozen mixed vegetables. Stir well, cover, and continue cooking until vegetables are heated through.
  3. Garnish with chopped parsley if desired. Serve the stew in bowls and top with freshly baked biscuits.
