Ingredients
  

Beef Ingredients
  • 2 pounds beef for stew (cut into chunks)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup onion (diced)
  • 1 tablespoon garlic (minced)
  • 2-3 sprigs thyme (minced, or 1/2 teaspoon dried) You can substitute fresh thyme with dried thyme.
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Better Than Bouillon Beef flavor
  • 2 cans mushroom soup (10-ounce)
  • 2 cups beef broth (low sodium, more if needed)
Noodle Ingredients
  • 12 ounces dried extra-wide egg noodles
  • 2 teaspoons parsley (minced) For garnishing.

Method
 

Preparation
  1. Place the beef chunks in your slow cooker.
  2. Sprinkle with salt, pepper, garlic, onion, thyme, and Better Than Bouillon.
  3. In a mixing bowl, combine the Worcestershire sauce, mushroom soup, and beef broth until smooth.
  4. Pour the mixture over the seasoned beef and cover the slow cooker with the lid.
Cooking
  1. Cook on high for 4-5 hours or low for 7-8 hours.
  2. About 20 minutes before you’re ready to serve, cook the dried egg noodles according to the package directions.
  3. Serve the noodles on a dish and top with the beef and gravy. Sprinkle with minced parsley before serving.

Notes

For extra depth of flavor, sear the beef in a hot skillet before adding it to the slow cooker. You can also cook the noodles in the crock pot. Adjust consistency with more beef broth if needed. Add a pinch of red pepper flakes for heat if desired.
