Ingredients
  

For the Beef Ribs
  • 6 pieces 300 – 350g beef ribs (aka beef short ribs) Pat dry
For the Dry Rub
  • 1 tbsp brown sugar Can substitute with white sugar
  • 2 tsp paprika
  • 1 tsp garlic powder Can substitute with 1 tsp fresh garlic
  • 1 tsp onion powder Can substitute garlic powder
  • 1/2 tsp cumin powder
  • 3/4 tsp mustard powder
  • 1 tsp cooking salt / kosher salt Reduce by 25% for table salt, increase by 50% for salt flakes
  • 1/2 tsp black pepper
For the Barbecue Sauce
  • 2 cloves garlic, minced Can substitute with 2 tsp garlic powder
  • 1/2 cup apple cider vinegar
  • 1 1/2 cups ketchup Or Aussie tomato sauce
  • 1/2 cup brown sugar, loosely packed Can substitute with white sugar
  • 2 tsp black pepper
  • 2 tsp onion powder
  • 2 tsp mustard powder
  • 1 tsp cayenne pepper Adjust to taste for spiciness
  • 1 tbsp Worcestershire sauce Can substitute with soy sauce
  • 2 cups water
For Serving
  • to taste none Parsley or chives, chopped For garnish

Method
 

Preparation
  1. Pat dry the beef ribs.
  2. In a small bowl, mix together the brown sugar, paprika, garlic powder, onion powder, cumin, mustard powder, salt, and black pepper. Rub this spice mixture all over the beef ribs.
Make the Barbecue Sauce
  1. In another bowl, combine the minced garlic, apple cider vinegar, ketchup, brown sugar, black pepper, onion powder, mustard powder, cayenne pepper, Worcestershire sauce, and water. Mix well to create the barbecue sauce.
Cooking
  1. Place the seasoned ribs in a slow cooker or large pot. Pour the barbecue sauce over the ribs, ensuring they are well coated.
  2. Cover and cook on low heat for about 6 to 8 hours, or until the meat is tender and easily pulls away from the bone.
  3. Once done, remove the ribs from the cooker and let them rest for a few minutes.
Serving
  1. Serve hot, garnished with chopped parsley or chives. These ribs go great with coleslaw, baked beans, or cornbread.

Notes

For extra flavor, marinate the beef ribs in the spice mixture overnight before cooking. For a thicker barbecue sauce, reduce the sauce on the stovetop after removing the ribs. Adjust the cayenne pepper for desired spiciness.
