- Melt the butter in a skillet over medium-high heat.
- Stir in the frozen corn and cook just until the corn is heated through, stirring often.
- Stir in the mayonnaise, sour cream, lime juice, ground cumin, and chili powder.
- Add half of the cotija cheese, stirring until melted.
- Sprinkle the top with the remaining cheese and garnish with a dash of chili powder and cilantro or green onions. Enjoy!
Notes
This Skillet Mexican Street Corn can also be grilled for a smoky flavor. Simply grill the corn on the cob until charred, then remove the kernels and proceed with the recipe as directed.
