Ingredients
  

  • 2 tablespoons butter
  • 4 cups frozen corn
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 lime, juice of
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 cup cotija cheese
  • 1/4 cup cilantro or green onions

Method
 

  1. Melt the butter in a skillet over medium-high heat.
  2. Stir in the frozen corn and cook just until the corn is heated through, stirring often.
  3. Stir in the mayonnaise, sour cream, lime juice, ground cumin, and chili powder.
  4. Add half of the cotija cheese, stirring until melted.
  5. Sprinkle the top with the remaining cheese and garnish with a dash of chili powder and cilantro or green onions. Enjoy!

Notes

This Skillet Mexican Street Corn can also be grilled for a smoky flavor. Simply grill the corn on the cob until charred, then remove the kernels and proceed with the recipe as directed.
