  • 8 ears ears of fresh corn
  • 0.25 cup chopped bacon (about 2 slices) Can substitute with turkey bacon or plant-based alternative
  • 1 tablespoon butter
  • 0.5 cup Vidalia onion, chopped
  • 0.5 cup heavy cream Can substitute with nut-based cream for a vegan option
  • Salt and pepper, to taste
  • 1 teaspoon chopped chives For garnish

Method
 

Cooking
  1. Remove the corn from the ears.
  2. Place a cast-iron skillet over medium-high heat and add the corn to the pan. Let it cook for about 2-3 minutes, stirring occasionally, to develop a lovely char.
  3. Add the chopped bacon and cook until the corn is well-charred and the bacon is crisp, roughly 5 minutes.
  4. In a separate skillet, melt the butter and sauté the chopped onion until it softens.
  5. Pour in the heavy cream and combine it with the corn mixture, letting it simmer for about 4-5 minutes while stirring occasionally.
  6. Season with salt and pepper, and finish with a sprinkle of fresh chives before serving.
