  • 1 pound fresh green beans Pick firm, bright pods with no soft spots. Trim the ends before cooking.
  • 2 tablespoons olive oil Extra-virgin for flavor, or a neutral oil if you prefer.
  • 3 cloves garlic, minced Adjust the amount to taste.
  • to taste salt Kosher salt seasons best.
  • to taste pepper Freshly ground black pepper is ideal.

Preparation
  1. Rinse the green beans and trim the ends. Pat dry.
  2. Heat a large skillet over medium heat and add the olive oil.
  3. Add the minced garlic and cook for 1–2 minutes, stirring, until fragrant and slightly golden. Watch it closely so it doesn’t burn.
  4. Add the green beans and toss to coat in the garlic oil.
  5. Season with salt and pepper, starting with a pinch of salt and a few turns of pepper.
  6. Cook, stirring occasionally, for about 5–7 minutes until the beans are tender but retain a crisp bite. Reduce heat if they brown too quickly.
  7. Taste and adjust seasoning. Serve warm as a side.

Notes
