  • 8 oz Noodles (egg noodles, ramen, or small pasta) Choose a quick-cook type.
  • 2 cups Vegetables (carrots, celery, onion, or mixed frozen vegetables) Aim for a mix of root vegetables and quick greens.
Optional Add-ins
  • 1 cup Cooked chicken or tofu Add at the end for protein.
  • 1 tbsp Soy sauce For additional flavor.
  • 1 lemon Juice of a lemon For seasoning.

Preparation
  1. Pour the broth into a medium pot and bring it to a gentle boil over medium-high heat.
  2. Add chopped hard vegetables (carrots, celery, onion) and reduce heat to maintain a steady simmer. Cook for 5–8 minutes until they begin to soften.
Cooking Noodles and Greens
  1. Stir in the noodles and continue to simmer, uncovered, following the noodle package time minus 1 minute for a slightly al dente texture.
  2. If using quick-cooking greens or pre-cooked protein, add them in the last 1–2 minutes to heat through.
Finishing touches
  1. Taste and season with salt, pepper, and a squeeze of lemon or a splash of soy sauce if desired.
  2. Ladle into bowls and serve immediately.
