- In your slow cooker, combine the chicken breasts with the diced vegetables, diced tomatoes, about 4 cups of water, chicken broth, chopped parsley, minced garlic, sea salt, and black pepper.

- Once the chicken is done, remove it from the slow cooker and shred it using two forks.
- Give the vegetables a gentle mash, aiming for some texture while keeping them somewhat intact (around 3-4 mashes should do).
- Cook the ditalini pasta as per the package instructions, drain it, and then add it to the slow cooker.
- Finally, return the shredded chicken to the pot, give everything a good stir, and you’re ready to devour!
Notes
For extra flavor, consider searing the chicken breasts briefly before adding them to the slow cooker. Experiment with fresh herbs like thyme or rosemary for a unique twist. For a thicker soup, mash the vegetables into a paste.
