  • 3-4 lbs. boneless skinless chicken breasts Can use frozen chicken, just extend the cooking time.
  • 1 large yellow onion (diced finely)
  • 4 stalks celery (diced finely)
  • 2 medium carrots (diced finely)
  • 2 large red bell peppers (chopped)
  • 2 large white potatoes (skin removed and diced)
  • 1 can diced tomatoes
  • 1/4 cup chopped fresh parsley
  • 4 cloves garlic (minced)
  • 1 tbsp. sea salt
  • 1 tsp. ground black pepper
  • 8 oz. ditalini pasta
  • 4 cups chicken broth

Method
 

Preparation
  1. In your slow cooker, combine the chicken breasts with the diced vegetables, diced tomatoes, about 4 cups of water, chicken broth, chopped parsley, minced garlic, sea salt, and black pepper.
  2. Close the lid and set your cooker to LOW. Let it cook for about 4-6 hours until the chicken is thoroughly cooked.
  3. Once the chicken is done, remove it from the slow cooker and shred it using two forks.
  4. Give the vegetables a gentle mash, aiming for some texture while keeping them somewhat intact (around 3-4 mashes should do).
  5. Cook the ditalini pasta as per the package instructions, drain it, and then add it to the slow cooker.
  6. Finally, return the shredded chicken to the pot, give everything a good stir, and you’re ready to devour!

Notes
