Preparation
- In a skillet over medium heat, add oil and chopped onion. Sauté until the onion is translucent.
- Add ground beef and cook until it is browned. Mix in taco seasoning and a splash of water. Simmer until well-seasoned and thick.
- Season shrimp with salt, pepper, and a pinch of chili powder or paprika. Sauté in a hot pan for 2-3 minutes per side until pink and just cooked. Set aside.
Cheese Sauce
- In a saucepan, melt butter and whisk in flour to form a roux. Slowly add milk, whisking until smooth.
- Stir in shredded cheese gradually until melted and silky. Add salt and cayenne to taste.
Baking
- Preheat the oven to 375°F (190°C).
- In a baking dish, layer tortilla chips, cooked beef, shrimp, and warm cheese sauce.
- Top with diced tomatoes, jalapeños, and more shredded cheese if desired. Bake for 5-7 minutes, just until everything is hot and melty.
Serving
- Drizzle with sour cream, sprinkle chopped cilantro, and squeeze lime juice over the top. Serve with salsa or hot sauce on the side.
