Ingredients
  

Main Ingredients
  • 1 lb shrimp, peeled and deveined Use medium or large; thaw if frozen
  • 4 small red potatoes, quartered Or substitute baby Yukon golds
  • 2 ears corn, cut into thirds Frozen corn on the cob works in a pinch
  • 1/2 lb smoked sausage, sliced Andouille or kielbasa are great choices
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning Adjust to taste
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Method
 

Preparation and Cooking
  1. Preheat your oven to 400°F or heat the grill to medium-high.
  2. In a large bowl, combine shrimp, quartered potatoes, corn pieces, and sliced sausage.
  3. Drizzle with olive oil, add Cajun seasoning, minced garlic, salt, and pepper.
  4. Toss until everything is evenly coated.
  5. Tear off four large pieces of heavy-duty aluminum foil.
  6. Divide the mixture evenly among the four foil sheets.
  7. Fold the foil over the ingredients and seal all edges tightly to make packets.
  8. For oven cooking: place packs on a baking sheet and bake 25–30 minutes, until potatoes are tender and shrimp are opaque.
  9. For grilling: place packs on the grill grates and cook 20–25 minutes, turning once halfway through.
  10. Carefully open the packets away from your face to avoid steam.
  11. Sprinkle with chopped parsley and serve each packet with lemon wedges.

Notes

Refrigerate leftovers within two hours of cooking. Consume within 3–4 days. To reheat, warm in an oven-safe dish or microwave. For freezing, remove shrimp before freezing and add freshly cooked shrimp later.
