  • 2 8-ounce boxes manicotti shells For stuffing
  • 1.5 pounds ground beef Adds richness to the filling

  • 2 teaspoons black pepper For seasoning
  • 1 teaspoon red pepper flakes For additional heat
  • 3 12-ounce packages bacon To wrap around the stuffed shells
  • cup barbecue sauce Plus more for coating

Method
 

Preparation
  1. Preheat your oven to 300°F (150°C) and line a baking sheet with aluminum foil.
  2. Place a wire rack on top of the baking sheet, ready for your shells.
  3. In a large bowl, combine ground beef, Italian sausage, diced onion, cheeses, jalapeño, and seasonings. Mix well until everything is evenly distributed.
  4. Carefully stuff each uncooked manicotti shell from both ends, ensuring there are no air pockets.
  5. Wrap strips of bacon around each stuffed shell, covering the ends completely. You may need two pieces of bacon for each shell.
  6. Brush additional barbecue sauce over both sides of the wrapped shells to enhance the flavor.
Cooking
  1. Place the shells on the prepared baking sheet and bake for 60 minutes.
  2. Flip the shells over, add more barbecue sauce, and bake for another 60-70 minutes until the bacon is crispy.
  3. Once done, take them out of the oven and let them cool slightly before serving.

Notes

For a milder dish, substitute hot Italian sausage with sweet Italian sausage and adjust jalapeño to taste. Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 2-3 months. Reheat in the oven at 350°F (175°C) for 20-30 minutes.
