Ingredients
  

For the Crust
  • 36 pieces Oreos (finely crushed)
  • 1 stick unsalted butter (melted)
For the Cream Cheese Layer
  • 8 oz cream cheese (softened at room temperature)
  • 1 cup powdered sugar
  • 1 tub frozen whipped topping (thawed at room temperature) divided
For the Pudding Layer
  • 3 boxes cheesecake instant pudding mix (3.4 oz each)
  • 3 cups cold milk
  • 1 teaspoon mint extract
  • Green gel food coloring not drops
Optional Garnishes
  • Oreo crumbs
  • whipped topping
  • Maraschino cherries
  • green sprinkles

Method
 

Preparation
  1. Preheat the oven to 375°F.
  2. In a large mixing bowl, combine crushed Oreos and melted butter until the mixture has a wet sand-like texture. Pour into a 9x13 baking dish, pressing firmly to form an even crust. Bake for 8 to 10 minutes, then set aside to cool.
  3. Beat cream cheese, powdered sugar, and one tub of whipped topping together until smooth. Spread over the cooled Oreo crust.
  4. In a new bowl, mix the pudding mixes with cold milk until fully combined. Blend in the second tub of whipped topping until smooth. Add mint extract and green gel food coloring, mixing until desired shade of green is achieved. Spread this layer over the cream cheese mixture.
  5. Refrigerate for 4 to 6 hours, preferably overnight, to let it set.
  6. Once chilled, sprinkle the top with Oreo crumbs and serve topped with whipped cream, cherries, and green sprinkles.

Notes
