  • 1.5 cups all-purpose flour
  • 2 Tbsp + 2 tsp sesame seeds (black or regular)
  • 2 Tbsp + 2 tsp poppy seeds
  • 2/3 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
Wet Ingredients
  • 1 cup mashed bananas (about 3 medium ripe) Buy ripe bananas for more sweetness and moisture.
  • 1/2 cup olive oil Alternatively, use a neutral oil.
  • 1 tsp vanilla extract
Mix-Ins and Toppings
  • 1 cup fresh or frozen blueberries
  • 1 Tbsp coarse sugar (like demerara cane sugar) Or use more granulated sugar.

Method
 

Preparation
  1. Preheat your oven to 350 degrees and line an 8-inch loaf pan with parchment paper.
  2. In a large mixing bowl, combine sesame seeds, poppy seeds, granulated sugar, baking powder, and salt.
  3. Create a well in the center of the dry ingredients, then add the mashed bananas, eggs, olive oil, and vanilla extract. Whisk to combine.
  4. Gently fold the wet ingredients into the dry ingredients until just combined, being careful not to overmix.
  5. Fold in the blueberries and transfer the batter to the prepared loaf pan.
  6. In a small bowl, mix the remaining sesame seeds, poppy seeds, and coarse sugar. Sprinkle this mixture evenly over the batter.
Baking
  1. Bake for about 50 minutes or until a toothpick inserted into the center comes out clean.
  2. Let the bread cool for about 15 minutes before slicing and enjoying.
