Ingredients
  

  • 1/2 cup all-purpose flour
  • 2 teaspoons seasoning salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 2 tablespoons lemon pepper
  • 16 sea scallops rinsed and drained
  • 2 tablespoons olive oil
  • 4 tablespoons chopped fresh parsley divided
  • 4 teaspoons lemon juice divided

Equipment

  • - Skillet or frying pan: Used for searing the scallops over high heat.
  • - Large bowl: Used for mixing the flour and seasoning mixture to coat the scallops.

Method
 

  1. In a large bowl, mix together the flour, seasoning salt, oregano, thyme, and lemon pepper. Roll the scallops in the flour mixture until lightly coated on all sides.
  2. Heat the olive oil in a skillet or frying pan over high heat. Add 4 scallops to the pan and sear on all sides for about 2 minutes per side.
  3. After turning the scallops, add 1 tablespoon of parsley and 1 teaspoon of lemon juice to the pan.
  4. Remove the scallops from the pan and place them on a plate in the oven to keep warm until ready to serve.
  5. Repeat the process with the remaining scallops, tossing each batch with parsley and lemon juice.
