Preparation
- Season the chicken breasts with salt, pepper, garlic powder, onion powder, thyme, and rosemary, rubbing the spices evenly on both sides.
- Heat olive oil in a pan over medium-high heat and sear the chicken breasts for 2-3 minutes on each side until golden brown.
- Transfer the seared chicken to the crockpot, and in the same pan, add diced onions and minced garlic. Sauté for 2 minutes until soft and fragrant.
- Add sliced mushrooms and cook for another 3 minutes.
- Pour chicken broth into the pan to deglaze, scraping up any browned bits, then stir in lemon juice.
- Pour the broth and vegetable mixture over the chicken in the crockpot.
Cooking
- Cover the crockpot and cook on low heat for 6-7 hours or on high heat for 3-4 hours until the chicken is fully cooked and tender.
- Once done, remove the chicken and let it rest for a few minutes. Garnish with fresh parsley before serving.

Notes
