Preparation
- Preheat your oven to 375°F (190°C). Prepare a muffin tin with cooking spray or paper liners.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, and set aside.
- In another bowl, combine the olive oil, Greek yogurt, milk, and eggs. Mix until well-blended.
- Gradually add the dry ingredients to the wet mixture while stirring gently to combine. Be careful not to overmix!
- Fold in the feta cheese, sun-dried tomatoes, black olives, and fresh herbs if using.
- Spoon the batter into the muffin tin, filling each cup about ¾ full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool for about 5 minutes before transferring to a wire rack.
