Ingredients
  

Dry Ingredients

  • 1/2 cup plain Greek yogurt Adds a lovely creaminess and touch of tang.
  • 1/2 cup milk Keeps everything together.
  • 2 large eggs Bind ingredients and add richness.
Mix-ins
  • 1/2 cup crumbled feta cheese The star ingredient that adds salty, creamy goodness.
  • 1/4 cup sun-dried tomatoes, chopped Brings a lovely sweetness.
  • 1/4 cup black olives, sliced Adds a briny flavor.
  • 1 tablespoon fresh parsley or basil, chopped Optional for a pop of freshness.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Prepare a muffin tin with cooking spray or paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, and set aside.
  3. In another bowl, combine the olive oil, Greek yogurt, milk, and eggs. Mix until well-blended.
  4. Gradually add the dry ingredients to the wet mixture while stirring gently to combine. Be careful not to overmix!
  5. Fold in the feta cheese, sun-dried tomatoes, black olives, and fresh herbs if using.
  6. Spoon the batter into the muffin tin, filling each cup about ¾ full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let cool for about 5 minutes before transferring to a wire rack.

Notes
