Preparation
- Preheat the oven to 150°C (300°F).
- In a mixing bowl, combine fresh goat cheese and heavy cream until smooth.
- Pour the mixture into ramekins.
- Place the ramekins into a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
Baking
- Bake for about 30-35 minutes or until set.
- Remove from the oven and allow to cool.
- Once cooled, chill in the refrigerator for at least 2 hours.
Serving
- Top with a layer of black pepper caramel (if using) and use a kitchen torch to caramelize the top until golden brown.
- Serve with a spoonful of fig chili jam on top.

Notes
