Preparation
- Preheat the oven to 150°C (300°F).
- In a mixing bowl, combine the goat cheese and heavy cream until smooth.
- Season with salt and pepper.
- Pour the mixture into ramekins.
- Place ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
Baking
- Bake for 30-35 minutes until just set.
- Let cool and refrigerate for a few hours.
Serving
- Before serving, top with a spoonful of fig chili jam and sprinkle sugar on top.
- Use a culinary torch to caramelize the sugar until golden brown.
- Serve immediately.
