Preparation
- Preheat the oven to 350°F (175°C) and grease a mini muffin tin lightly.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat the egg and whisk in the buttermilk and melted butter.
- Pour the wet ingredients into the dry mixture and stir gently until just combined, avoiding overmixing.
- Fold in the crumbled sausage, shredded cheese, and chopped chives.
- Spoon the batter into the prepared mini muffin tin, filling each cup about three-quarters full.
Baking
- Bake for 12-15 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
- Allow to cool in the pan for 5 minutes before transferring to a wire rack.
Serving
- Serve warm with maple syrup drizzled on top if desired.
