Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar can be reduced or left out for less sweetness
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk can substitute with buttermilk alternatives
  • 1 large egg
  • 2 tablespoons melted butter
Savory ingredients
  • 1/2 cup cooked and crumbled breakfast sausage
  • 1/2 cup shredded cheddar cheese can switch with other cheese options
  • 1/4 cup finely chopped chives for added flavor
For serving
  • Maple syrup optional, for drizzling

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin lightly.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, beat the egg and whisk in the buttermilk and melted butter.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined, avoiding overmixing.
  5. Fold in the crumbled sausage, shredded cheese, and chopped chives.
  6. Spoon the batter into the prepared mini muffin tin, filling each cup about three-quarters full.
Baking
  1. Bake for 12-15 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
  2. Allow to cool in the pan for 5 minutes before transferring to a wire rack.
Serving
  1. Serve warm with maple syrup drizzled on top if desired.
