  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tbsp fresh parsley, chopped (for garnish)

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Add the sliced onions and sauté for about 3-4 minutes until they start to soften.
  • Add the sliced mushrooms and minced garlic to the skillet, stirring well to combine.
  • Cook for an additional 5-7 minutes, stirring occasionally, until the mushrooms are tender and golden brown.
  • Season with salt and pepper to taste.
  • Remove from heat and sprinkle with fresh parsley before serving.

Notes

Store any leftovers in an airtight container in the refrigerator. They will last for about 3 days. Reheat in a skillet or microwave before serving again. Make sure to slice the mushrooms and onions evenly to ensure they cook at the same rate. Don’t overcrowd the skillet; if needed, sauté in batches to get a nice caramelization on the vegetables. Feel free to add other herbs and spices, like thyme or paprika, for extra flavor. You can add bell peppers or spinach for added color and nutrition.
