  • 1 package three-cheese tortellini
  • 2 sweet potatoes, diced
  • 2 cups spinach
  • 3 cloves garlic, minced
  • 4 cups chicken broth or vegetable broth for a vegetarian option
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Olive oil for cooking

  1. In a large pot, heat olive oil over medium heat and cook the sausage until browned.
  2. Add garlic and sweet potatoes, cooking for about 5-7 minutes until the sweet potatoes start to soften.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the tortellini and cook according to package instructions.
  5. Stir in the spinach and heavy cream, and season with salt and pepper.
  6. Simmer for another 5 minutes until heated through and serve warm.
