  • 1 package three-cheese tortellini
  • 2 sweet potatoes, diced
  • 2 cups spinach
  • 3 cloves garlic, minced
  • 4 cups chicken broth or vegetable broth for a vegetarian option
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Olive oil for cooking

  • In a large pot, heat olive oil over medium heat and cook the sausage until browned.
  • Add garlic and sweet potatoes, cooking for about 5-7 minutes until the sweet potatoes start to soften.
  • Pour in the chicken broth and bring to a boil.
  • Add the tortellini and cook according to package instructions.
  • Stir in the spinach and heavy cream, and season with salt and pepper.
  • Simmer for another 5 minutes until heated through and serve warm.

Notes

Serve the soup hot, garnished with freshly grated parmesan cheese and a sprinkle of black pepper. A side of crusty bread or a light salad complements the dish beautifully. You can drizzle high-quality olive oil over the top just before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Consider freezing for up to three months.
