- In a large pot, heat the olive oil over medium-high heat.
- Add the diced onion and sauté for about 4-5 minutes, or until it’s softened.
- Stir in the Italian sausage, breaking it up with a spoon as it cooks until browned. Drain any excess grease.
- Toss in the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and crushed tomatoes, then add the oregano, basil, and optional red pepper flakes. Stir well and bring this mixture to a boil.
- Once boiling, reduce the heat to low and let it simmer for 20-30 minutes, allowing those flavors to marry.
- Add the tortellini to the pot and cook for about 4-6 minutes, or until tender.
- Remove from heat, stir in the spinach, cover the pot, and let it sit for 1-2 minutes until the spinach has wilted. Season with salt and pepper to taste.
- Serve hot and savor every delicious spoonful!
