Method
 

Preparation
  1. In a large pot, heat the olive oil over medium-high heat.
  2. Add the diced onion and sauté for about 4-5 minutes, or until it’s softened.
  3. Stir in the Italian sausage, breaking it up with a spoon as it cooks until browned. Drain any excess grease.
  4. Toss in the minced garlic and cook for an additional minute until fragrant.
  5. Pour in the chicken broth and crushed tomatoes, then add the oregano, basil, and optional red pepper flakes. Stir well and bring this mixture to a boil.
  6. Once boiling, reduce the heat to low and let it simmer for 20-30 minutes, allowing those flavors to marry.
  7. Add the tortellini to the pot and cook for about 4-6 minutes, or until tender.
  8. Remove from heat, stir in the spinach, cover the pot, and let it sit for 1-2 minutes until the spinach has wilted. Season with salt and pepper to taste.
  9. Serve hot and savor every delicious spoonful!
