  • 1 medium yellow onion (diced)
  • 1 lb Italian sausage (mild or spicy)
  • 4 cloves garlic (minced)
  • 6 cups chicken broth
  • 1 28-ounce can crushed tomatoes
  • 1.5 teaspoons dried oregano
  • 1.5 teaspoons dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 9-ounce package refrigerated cheese tortellini
  • 4 cups fresh spinach (packed)
  • Salt and pepper (to taste)

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium-high heat.
  2. Add the diced onion and cook for 4-5 minutes until softened.
  3. Introduce the Italian sausage, breaking it up with a spoon, and cook until browned. Drain any excess grease.
  4. Stir in the minced garlic and cook for about 1 minute, letting the delightful aroma fill the air.
  5. Pour in the chicken broth, crushed tomatoes, oregano, basil, and red pepper flakes. Stir well and bring the mixture to a boil.
  6. Reduce the heat to low and let it simmer for 20-30 minutes, allowing the flavors to deepen.
  7. Add the tortellini to the pot and simmer for an additional 4-6 minutes, or until the tortellini is tender.
  8. Remove from heat, stir in the packed fresh spinach, and cover the pot. Let it sit for 1-2 minutes to allow the spinach to wilt.
  9. Season with salt and pepper to taste. Serve hot and enjoy the deliciousness!
