Main Ingredients
  • 1 lb Italian sausage Use high-quality sausage for better flavor.
  • 1 can Diced tomatoes Canned or fresh.
  • 9 oz Fresh cheese tortellini Frozen tortellini can also be used; adjust cooking time.
  • 2 cups Arugula Fresh, add last to wilt.
  • 4 cups Chicken broth Can substitute vegetable broth for a vegetarian version.
  • 1 medium Onion Diced.
  • 3 cloves Garlic Minced.
  • 2 tbsp Olive oil
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, and cook until translucent.
  3. Break up and brown the Italian sausage in the pot.
  4. Stir in the diced tomatoes and chicken broth, bringing to a simmer.
  5. Add the tortellini and cook according to package instructions until al dente.
  6. Gently stir in the arugula and allow it to wilt.
  7. Season with herbs, salt, and pepper to taste.
  8. Serve hot and enjoy.
