  • 1 lb breakfast sausage
  • 6 large eggs
  • 1/2 cup shredded cheddar cheese Feel free to adjust the amount based on preference.
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large flour tortillas You can use whole wheat tortillas for a healthier option.

Method
 

Cooking the Sausage and Eggs
  1. In a skillet over medium heat, cook the breakfast sausage until browned.
  2. In a bowl, whisk together the eggs, milk, salt, and pepper. Pour the egg mixture into the skillet with the sausage and scramble until cooked through.
  3. Remove from heat and stir in the cheddar cheese.
Assembling the Roll-Ups
  1. Lay out each flour tortilla and spoon some of the sausage and egg mixture onto the center. Roll up each tortilla tightly.
Cooking the Roll-Ups
  1. Heat butter or oil in a skillet over medium heat and place the roll-ups seam side down. Cook until golden brown on all sides.
  2. Serve warm.
