  • 6 large eggs
  • 1/2 cup shredded cheddar cheese Feel free to adjust the amount based on preference.
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large flour tortillas You can use whole wheat tortillas for a healthier option.

Cooking the Sausage and Eggs

  • In a skillet over medium heat, cook the breakfast sausage until browned.
  • In a bowl, whisk together the eggs, milk, salt, and pepper. Pour the egg mixture into the skillet with the sausage and scramble until cooked through.
  • Remove from heat and stir in the cheddar cheese.

Assembling the Roll-Ups

  • Lay out each flour tortilla and spoon some of the sausage and egg mixture onto the center. Roll up each tortilla tightly.

Cooking the Roll-Ups

  • Heat butter or oil in a skillet over medium heat and place the roll-ups seam side down. Cook until golden brown on all sides.
  • Serve warm.

Notes

You can serve these roll-ups with salsa, hot sauce, or avocado for extra flavor. They also pair well with fresh fruits or yogurt. Leftover roll-ups can be stored in the fridge wrapped in plastic wrap or aluminum foil for up to 3 days, or frozen for about a month.
