Preparation

  • In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  • In another bowl, whisk together the milk, egg, and melted butter.
  • Pour the wet ingredients into the dry ingredients and stir until just combined (the batter may be lumpy).

Cooking

  • Heat a griddle or frying pan over medium heat and grease lightly.
  • Pour approximately 1/4 cup of batter onto the griddle for each pancake.
  • While pancakes cook, dip the sausages into the pancake batter and place them on the griddle.
  • Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
  • Serve warm with maple syrup.

Notes

Make sure not to overmix the batter; it's okay if it’s a little lumpy. This helps keep the pancakes fluffy. Use a non-stick griddle or skillet to prevent sticking when cooking. Experiment with different types of sausages; spicy or sweet sausages can add a nice twist.
