Salted Caramel Stuffed Brownies

Ingredients
  

For the brownies:

  • 1/2 cup unsalted butter
  • 8 oz dark chocolate chopped
  • 1 1/4 cups granulated sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • For the salted caramel:
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter room temperature
  • 1/2 cup heavy cream
  • 1 teaspoon sea salt

Instructions
 

  • Preheat oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.
  • For the brownies, melt butter and chocolate in a heatproof bowl over a pan of simmering water. Remove from heat and stir in sugar. Add eggs and vanilla, mixing well. Sift in flour, cocoa powder, and salt. Mix until just combined.
  • Pour half of the batter into the prepared pan. Bake for 20 minutes.
  • While the first layer bakes, make the caramel. Melt sugar in a saucepan over medium heat, stirring constantly. Once fully melted, add butter and stir until combined. Slowly drizzle in heavy cream while stirring. Boil for 1 minute, then remove from heat. Stir in sea salt.
  • Pour caramel over the baked brownie layer. Top with remaining brownie batter. Bake for another 20-25 minutes.
  • Let cool in pan, then slice into squares. Enjoy!

Notes

Allow the brownies to cool completely before slicing to ensure clean cuts and easy removal from the pan.
