  • 6 oz dark or milk chocolate, chopped any variety you fancy will elevate the flavor
  • 1 tsp neutral oil optional, for shine

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.
Making the Base
  1. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Add the flour, fine salt, and vanilla extract, mixing until combined.
  3. Press this mixture into the bottom of the prepared baking pan.
  4. Bake for 15-20 minutes or until lightly golden and set.
Making Caramel
  1. In a saucepan, heat 1 cup of granulated sugar over medium heat until it melts and turns a deep amber color.
  2. Carefully whisk in the cubed butter until it melts, followed by the warm cream and sea salt.
  3. Stir until smooth, then pour the caramel over the baked crust.
Topping With Chocolate
  1. Place the chopped chocolate in a heatproof bowl and melt it using a microwave or a double boiler.
  2. Stir in the optional neutral oil for added shine.
  3. Drizzle the melted chocolate over the caramel layer, spreading it evenly.
  4. Sprinkle with flaked sea salt.
Chill and Serve
  1. Let the bars cool to room temperature, then refrigerate until completely set, often about 2 hours.
  2. Cut into squares and enjoy!

Notes

For best results, ensure butter is soft but not melted. Keep a close eye while making caramel to avoid bitterness. Use short bursts to melt chocolate in the microwave.
