  • 4 pieces boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • to taste Salt & pepper
  • 2 cups chunky salsa store-bought or homemade
  • 1/2 cup diced red onion
  • 1/2 cup diced green bell pepper
  • 1/4 cup chopped fresh cilantro for garnish

Preparation

  • Preheat the oven to 375°F (190°C).
  • Season the chicken breasts with salt, pepper, chili powder, and cumin on both sides.
  • In an oven-safe skillet, heat the olive oil over medium heat. Sear the chicken for 2–3 minutes on each side until it is lightly browned.

Cooking

  • Pour the salsa over the chicken. Then, sprinkle the diced red onion and green bell pepper evenly on top.
  • Transfer the skillet to the oven and bake for 20–25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  • Before serving, garnish with fresh cilantro.

Notes

For extra flavor, marinate the chicken in the spices and salsa for a few hours before cooking. Feel free to add other vegetables like zucchini or corn for more texture and taste. If you like it spicy, add some diced jalapeños or a splash of hot sauce to the salsa. Can be served with warm tortillas, rice, or quinoa.
