Ingredients
  

  • 4 large boneless skinless chicken breasts
  • 2 tablespoons taco seasoning
  • 2 cups salsa, mild or medium
  • 1 tablespoon chopped fresh cilantro
  • salt and freshly ground black pepper to taste

Method
 

  1. Place the chicken breasts in a single layer in the bottom of a slow cooker.
  2. Sprinkle with taco seasoning and top with salsa.
  3. Cover with the lid and cook for 2-2 1/2 hours on high or 4-5 hours on low or until the chicken is easily shredded with two forks.
  4. Season with salt and freshly ground black pepper to taste.

Notes

This dish is incredibly versatile. Serve the shredded chicken in tacos, burritos, salads, or as a topping for rice or quinoa. Adjust the level of spiciness by using mild, medium, or hot salsa.
