Preparation
- Preheat the oven to 425°F (220°C).
- Season the chicken thighs generously with all the spices and herbs.
- Sear the chicken thighs in a hot, oven-safe skillet with a splash of olive oil until they’re golden brown on both sides.
- Arrange the sliced red onions and apples around the chicken in the skillet.
- Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is fully cooked and juices run clear.
- Remove the chicken and apples from the skillet. On the stovetop, combine the sauce ingredients in the same skillet.
- Whisk and cook until the sauce thickens slightly.
- Return the chicken and apples to the pan, spoon the sauce over them, and let it rest for a few minutes before serving.

Notes
