  • 4-5 pieces Bone-In Chicken Thighs
Spices & Herbs
  • 2 tsp Onion Powder
  • 2 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Fresh Thyme
  • 2 tbsp Fresh Rosemary, chopped
Fruits & Vegetables
  • 1 pieces Red Onion, sliced
  • 1-2 pieces Honeycrisp Apples, sliced Feel free to swap with another sweet and crisp apple variety.
For the Sauce
  • 4 tbsp Salted Butter
  • 3/4 cup Apple Cider
  • 1/2 cup Chicken Broth or White Wine
  • 2 tbsp Dijon Mustard
  • 3 cloves Garlic, minced
  • Olive oil, Salt & Pepper to taste

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Season the chicken thighs generously with all the spices and herbs.
  3. Sear the chicken thighs in a hot, oven-safe skillet with a splash of olive oil until they’re golden brown on both sides.
  4. Arrange the sliced red onions and apples around the chicken in the skillet.
  5. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is fully cooked and juices run clear.
  6. Remove the chicken and apples from the skillet. On the stovetop, combine the sauce ingredients in the same skillet.
  7. Whisk and cook until the sauce thickens slightly.
  8. Return the chicken and apples to the pan, spoon the sauce over them, and let it rest for a few minutes before serving.

Notes

For extra flavor, marinate the chicken in apple cider and rosemary for a couple of hours. You can freeze the cooked chicken and sauce; use airtight containers to prevent freezer burn.
