- Brownies:
- Preheat oven to 350°F. Line a 9x9 baking dish with parchment paper, leaving overhang on sides.
- In a small bowl, whisk together flour, cocoa powder, and salt. Set aside.
- In a medium heat-safe mixing bowl, combine butter and dark chocolate chips. Microwave in 15-second intervals until melted and smooth.
- Stir in granulated sugar and brown sugar until incorporated.
- Add eggs one at a time, then vanilla extract, stirring until combined.
- Stir in flour mixture until just combined.
- Spread half of the brownie batter into prepared pan. Arrange frozen halved Rolos evenly over batter.
- Spoon and spread remaining batter over Rolos. Bake for 25-30 minutes until a toothpick inserted comes out clean.
- Ganache:
- In a small heat-safe bowl, combine dark chocolate chips and heavy cream. Microwave for 30-40 seconds until smooth.
- Pour ganache over baked brownies, spreading to edges.
- Arrange halved Rolos over ganache.
- Allow brownies to cool completely before slicing.
